Light, fragrant and loaded with fresh durian cream, a homemade durian cake is a real celebration bake — perfect for birthdays, gatherings or simply spoiling durian-loving family. This durian cake recipe uses a soft sponge and a whipped Mao Shan Wang filling for a cake that’s rich but never heavy.

Two components: sponge and durian cream
We’ll bake a light sponge, then split and fill it with a whipped durian cream. The sponge stays plain and airy so the durian flavour leads. Using fresh, rich durian in the cream is what separates a great durian cake from a forgettable one.
Ingredients
Makes one 8-inch cake.
For the sponge:
- 4 eggs, room temperature
- 120g caster sugar
- 120g plain flour, sifted
- 40g melted butter
- 1 tsp vanilla extract
For the durian cream:
- 400ml thickened / heavy cream, well chilled
- 300g durian flesh, seeds removed and mashed (fresh Mao Shan Wang recommended)
- 2–3 tbsp sugar, to taste
Steps
- Preheat the oven to 170°C and line an 8-inch round tin.
- Whisk the eggs and sugar. Beat until pale, thick and tripled in volume — this gives the sponge its lift.
- Fold in flour. Sift in the flour and fold gently to keep the air. Fold in the vanilla and melted butter last, quickly and lightly.
- Bake. Pour into the tin and bake 30–35 minutes until golden and springy. Cool completely, then slice horizontally into two or three layers.
- Make the durian cream. Whip the cold cream with sugar to firm peaks, then fold in the mashed durian until combined. Chill briefly if it softens.
- Assemble. Layer sponge and durian cream, finishing with cream on top and sides. Smooth it out.
- Chill. Refrigerate at least 2 hours (or overnight) so it sets and slices cleanly. Decorate with a little extra durian on top if you like.

- Whip the eggs fully — a well-aerated batter is the secret to a soft sponge.
- Fold gently so you don’t knock out the air.
- Keep the cream cold and don’t overwhip once the durian is in.
