No-Bake Durian Cheesecake Recipe

No-Bake Durian Cheesecake Recipe

Rich, creamy and set without ever turning on the oven, this no-bake durian cheesecake is a fuss-free showstopper. A buttery biscuit base holds a smooth durian-cream cheese filling that slices beautifully once chilled. It’s the perfect make-ahead dessert for gatherings — assemble it the night before and let the fridge do the work.

Because there’s no baking, the durian flavour stays fresh and pronounced. The only patience required is chilling time. Here’s the full recipe, with tips for a clean, sliceable set.

Ingredients

Makes one 20 cm cheesecake (about 8 slices).

For the base

  • 200 g digestive biscuits (or other plain biscuits), crushed
  • 90 g butter, melted

For the filling

  • 250 g cream cheese, softened
  • 250 g durian flesh (deseeded), mashed smooth
  • 200 ml cold whipping cream
  • 60 g sugar, adjusted to taste
  • 2 teaspoons gelatine powder plus 2 tablespoons water
  • A pinch of salt

Method

Make the base

  1. Crush and mix. Crush the biscuits to fine crumbs and stir in the melted butter until it resembles wet sand.
  2. Press. Press the mixture firmly and evenly into the base of a lined springform tin. Use the back of a spoon to compact it.
  3. Chill. Refrigerate the base while you make the filling so it firms up.

Make the filling

  1. Bloom the gelatine. Sprinkle the gelatine over 2 tablespoons of water, let it swell for a few minutes, then warm gently until dissolved and clear. Set aside to cool slightly.
  2. Beat the cream cheese. Beat the softened cream cheese with the sugar and salt until smooth and lump-free.
  3. Add the durian. Mix in the mashed durian until fully combined, then stir in the cooled gelatine.
  4. Whip and fold. In a separate cold bowl, whip the cream to soft peaks, then gently fold it into the durian mixture until smooth and light.

Assemble and set

  1. Fill. Pour the filling onto the chilled base and smooth the top with a spatula.
  2. Chill thoroughly. Cover and refrigerate for at least 6 hours, ideally overnight, until fully set.
  3. Unmould and serve. Run a warm knife around the edge, release the springform, and slice with a clean, warm knife for neat pieces. Serve chilled.

Tips for a clean, creamy set

  • Don’t skip the gelatine. For a no-bake cheesecake, it’s what gives you sliceable structure.
  • Cool the gelatine before adding it so it doesn’t seize on contact with cold ingredients.
  • Soften the cream cheese first to avoid lumps in the filling.
  • Chill overnight if you can. A fully set cheesecake slices cleanly; a rushed one slumps.
  • Use ripe, fragrant durian for the boldest flavour — it carries the whole cake.

Why this no-bake method works

A baked cheesecake sets through eggs and heat; a no-bake one sets through gelatine and chilling instead. That’s what makes this recipe so approachable — there’s no water bath, no cracked top, and no anxious oven-watching. The gelatine gives the filling enough structure to slice neatly once fully chilled, while the whipped cream folded through keeps it light and mousse-like rather than dense. The cream cheese brings a gentle tang that balances durian’s richness, stopping the whole thing from feeling too heavy.

The biscuit base is simply crumbs bound with melted butter, pressed firm and chilled until it sets. Compacting it well is what gives you a base that holds together when you cut into it rather than crumbling apart. Every element here relies on the fridge, not the oven, doing the work.

Make-ahead and serving

This is the ideal make-ahead dessert for a gathering. Assemble it the day before, let it set overnight, and it’ll slice cleanly and taste even better for the rest. Keep it covered in the fridge until the moment you serve, and use a warm, clean knife between cuts for tidy slices. For a finishing touch, top with a few fresh durian pieces or a light biscuit crumble just before serving. As with all durian dishes, seal it well in the fridge so the aroma doesn’t spread to everything else.

Which durian works best

A bittersweet, creamy variety like Mao Shan Wang gives a deep, indulgent cheesecake that balances the tang of the cream cheese, while sweeter varieties make a gentler, family-friendly slice. Frozen durian is perfectly fine here since it’s blended into the filling — just thaw and drain any excess liquid first. Comparing varieties? See the different durian varieties in Singapore.

Frequently asked questions

Can I make this without gelatine?

Gelatine gives a no-bake cheesecake its sliceable set. Without it, the filling stays soft and mousse-like — still delicious, but better served in cups than as neat slices. Agar-agar is an option but sets firmer and needs different handling.

Can I use frozen durian?

Yes. Thaw it in the fridge and drain excess liquid before mashing. Since it’s folded into the filling, frozen durian works well.

Why didn’t my cheesecake set?

Common causes are too little gelatine, gelatine that wasn’t fully dissolved, or not enough chilling time. Make sure the gelatine is clear and dissolved, and chill for at least 6 hours, ideally overnight.

How long does it keep?

Kept covered in the fridge, it’s best within two to three days. Seal it well, as durian’s aroma spreads easily through the fridge.

Can I make it in advance?

Absolutely — it’s an ideal make-ahead dessert. Assemble it the day before and let it set overnight, then slice and serve chilled.
